I was looking for a good strawberry cake recipe for my mom's birthday request and found this yummy treat. I brought a pieve home for Peter because he stayed home to get some rest (he's still sick) and he loved it! I had enough strawberries left so I made the one pictured above yesterday. Here's the recipe.
I tweaked it a bit. I put both layers together with some lightly sugared mashed strawberries between them. The cake soaked in the juices very nicely! Then I poured the glaze on top and cut up the few strawberries I had left as a garnish for the top. The cake has fresh strawberries in it, between the cakes, and on top! I used 2lbs of strawberries for the whole thing. The cake is almost more of a muffin texture- which I liked. When you do the glaze, be sure to mix the liquid and the strawberries first and then slowly add the powdered sugar in. I forgot to do that the first time and had sugar clumps- but it still tasted great.
Now, because I get a kick out of it, I thought I'd share. We have a spider that squeaks when you squeeze it. Joseph is too little to squeeze it so he came up with his own way of making it squeak. Please don't look at my messy living room. It was a busy day and we hadn't picked up yet...
