Look Who Came To Visit!




It is Eric's 3rd birthday today and a celebrity came to visit. At least he's a celebrity in our house. Rocket from the Little Einstein movies is one of Eric's favorite characters and we've been watching a movie we borrowed from my Mom every day for the past couple of weeks. (Save me!) So I figured Rocket would be an appropriate cake and I thought I'd try my hand at fondant. I used marshmallow fondant (thanks to Heidi) and a really great buttercream underneath that. I even made the cake from scratch this time and it's nice and spongy like a box cake (tastes kind of like Devil's Food actually). Anyway- I was so excited to see his face when he got a glimpse of it this morning. He was so cute and happy to see Rocket there. He wanted to eat it for breakfast. Poor guy has to wait until after dinner when the Grandparents come over to have his cake. (By the way, I got the best chocolate cake recipe, the lightest bettercream recipe and the design for Rocket's engines from the website Andreas Recipes.)




Eric is such a joy to have around. He's got dimples like the grand canyon and eyelashes that look like fuzzy caterpillar on his eyelids. He can melt your heart when he says "I wuv you" but has a quick temper and doesn't like to be told "no." For a while I thought something was wrong with his hearing until I realized he only said "what?" after I told him an answer he didn't want to hear. He's a happy smart loving 3 year old and I am SO glad he is a part of our family!

Thanks Stacy and Jen! No, the fondant wasn't as difficult as I thought it might be. It doesn't taste great but I put buttercream underneath and the adults all just took the fondant off- the kids ate it all. I recommend the marshmallow fondant though. The hardest part was kneading in the red coloring. It took almost a whole little jar of the tasteless red gel to get it red! Then you don't even have to cover the cake overnight because it stays fresh for a while. You can always make some and have the kids play with it to get used to it. It stays good wrapped up tight in plastic wrap for a few month on the counter (so I've heard).
